2-1/2 Quart Bean Pot Version

1 package (1 pound) navy
or pea beans
1/4 pound salt pork, cut
in 2 pieces
1 small whole onion,
peeled
1 teaspoon dry mustard
8 cups water
1/3 cup molasses
1 teaspoon salt
1/2 teaspoon baking soda
3 tablespoons sugar
1/4 teaspoon pepper
1) Soak beans overnight in a large sauce pan in 6
cups of water. Add baking soda. Heat to
boiling and simmer 10 minutes. Drain in colander over a
large bowl. Save liquid.
2) Place beans,
salt pork and onion in the
bean
pot. Add molasses, salt, sugar, dry mustard, pepper
and a cup of water. Stir thoroughly. Add enough water to
cover the beans. Cover the
bean
pot.
3) Bake 2 hours
at 300 degrees. Add the rest of the water and stir
again. Bake additional 1-1/2 hours (or until beans
are tender). Uncover last 1/2 hour.

2 medium onions, 1 whole peeled and one chopped
8-12 oz salt pork
1 tbs dry mustard
1 cup molasses
2-3 tsp. pepper
1 1/2 tsp baking soda
2/3 cup
brown sugar
2-3 tsp salt
1) Soak beans with
4 quarts
of water and then add baking soda. Leave to soak over
night. (some cooks boil the beans briefly before soaking
over night to produce a more tender and less gassy bean.
2) Drain beans and reserve the water.
3) Mix beans with chopped onion, mustard powder, brown
sugar, molasses, pepper, salt, and 2 cups of reserved
water.
4) Place 1/2 of mixture in 8 quart bean pot. add the
whole peeled onion. Top with remaining beans.
5) Place the salt pork on top of the beans, rind side
up. pour enough of reserved water over top to cover
beans. Cover bean pot.
6) Bake at 250 degrees, adding water as needed to keep
the beans moist. After 8 hours uncover pot and cook two
hours more.

Bake 6-8 hours at 250 degrees - Serves at least 10.

1 to 1-1/2 teaspoon dry mustard
1 teaspoon
baking soda
1/2 pound salt pork
1 cup molasses
2 teaspoons salt
1/2 teaspoon pepper
1) Soak overnight in
2 quarts
of water. Add baking soda. Simmer for
20 minutes. Then soak in same water for one more
hour. Drain reserving water.
2) Place half of the beans in bean pot. Mix mustard,
molasses, brown sugar, salt and 2 cups of water. Pour
baking mixture over beans in pot. Mix (place 1 or 2
onions on top of beans) remaining sauce with remaining
beans. Pour over onions. Place the salt pork over the
beans, rind up. Fill enough water to cover beans. Cover
bean pot.
3) Bake 6-8 hours at 250 degrees. Add water as needed to
keep the beans moist. Uncover during last 45 minutes to
brown rind.
