HOW TO

SEASON & CLEAN

OUR OMELETTE PAN

  1. Scrub well using a sponge and light, soapy water to quickly remove any  surface dirt.  Then rinse and dry the pan thoroughly with paper towels or by air drying. (This is the only time water should ever be used to clean the inside of the pan).

  2. Cover entire surface with cooking oil.

  3. Heat until hot, not smoking. Let stand overnight.

  4. Pour oil out. Put 1 Tbsp. salt into pan. Heat lightly. With towel rub salt into pan. Wipe out all of the salt. DO NOT WASH.

  5. Pan is now seasoned.

  6. After each use, clean  only by wiping out with paper towel,

  7. DO NOT WASH.

I recently purchased the 10" high polish version.  I must confess to some degree of initial apprehension owing to my doubt as to whether polished aluminum could possess the non-stick characteristic necessary for a great omelette.   Although I have always been a Julia fan and was moved by your customer testimonials, I did have visions of stuck scrambled eggs rather than silky classic omelets.   I seasoned the pan per your instructions and soon discovered that my fear was utterly unwarranted:  the pan performed beautifully.  It is also aesthetically impressive.  You have a gem of a product and I commend you for your company's endurance.  If I can do anything to help spread the word, please let me know.

I am delighted that the Internet allowed me to come around to your site for the purchase of a new omelet pan. I was given one of your originals some forty years ago and  used it this morning at our inn on the Vineyard. When I was young ( and the youngest of 5) my father and I used to wake ahead of the rest of the household and often collaborate on the making of the "perfect egg" . Our Mom had been a rabid Julia Child fan and had  your omelet pan in her arsenal. I learned the process of fine French omelets then with your pan and was subsequently given one (granted a strange gift for a 12 year old Carolina boy) and have used it often ever since.

 

My wife and I cook breakfast every day for the guests at our seasonal Vineyard inn, The Outermost Inn and twice weekly I crank out at least 14 custom made omelets off your pan. I've burnt the pan badly enough to have the handle catch fire, but it still seasons quickly with little effort.

 

Congratulations for keeping this fine product out there. It is without doubt the best omelet pan and, when given as a gift, should be a cherished legacy to any lucky recipient...forever!

Dear Pot Shop:

I was delighted to learn you are still making the French Chef Omelette Pan. I was given one as a gift in the early 1960s and have been doing Sunday omelettes for my grandchildren for many, many years. They think the wonderful omelettes are my doing, but I know it's the wonderful pan.

I now plan to present each of my seven grandchildren, who are now young adults, with a French Chef Omelette Pan this Christmas.

The Original French Chef Omelette Pan:

Sausage & Mushroom with Goat Cheese & Manchego

 

Most days I feel really lucky. The day I found this omelette pan for $5 at a garage sale was one of those extraordinary lucky days. It was dirty and laying on a dusty table underneath an old wok. It was the oddest-looking pan I'd ever seen. The metal looked sandy and there was no shine to it. But for $5 I decided it could at the very least be good to pound chicken cutlets.

It ended up being the best $5 I've ever spent. The omelet pan was created in 1963 when Julia Child asked The Pot Shop of Boston to design it, and where it is still sold today. My pan dates back to 1963 or 1964 – the only 2 years the pan was made with a dark wood handle. To be 46 years old, this pan has

held up incredibly well and still turns out a "flawless omelet that is perfectly golden with a creamy center*".

Sausage & Mushroom Omelet with Goat Cheese & Manchego

INGREDIENTS

  • 2 links Chicken Italian Sausage, sliced into thin rounds

  • 8 ounces Crimini Mushrooms, sliced

  • 15 cherry tomatoes, halved

  • 2 ounces Goat Cheese

  • 1/2 cup Manchego, grated

  • 8 eggs

  • 1/4 cup Half & Half

  • 2 tablespoons butter

  • salt & pepper, to taste

  • Aged Balsamic Vinegar, optional

DIRECTIONS

In a skillet heat 1 tbsp olive oil. Add mushrooms, sausage and season with salt and pepper. Saute until cooked through and golden brown. Remove from pan and set aside.

Meanwhile, in a bowl whisk together eggs and half & half.

Preheat the pan over medium heat. When the pan is heated, add 2 tablespoons of butter. Turn the heat down slightly. Pour eggs into the pan. Using a spatula, let the eggs begin to set and slowly lift up the edges and tilt the pan so the egg goes to the bottom of the skillet. Repeat this step until the eggs are almost cooked completely. The top should still be wet. Season with salt and pepper.

Top the eggs with the sausage, mushrooms, tomatoes and cheeses. Place in oven for 5 minutes until top is set.

Remove from oven and top with a drizzle of aged balsamic vinegar if you so desire. I do.

Choosing the Right Omelette (Omelet) Pan

 

8" & 10" Natural Sand Finish Omelette Pans

Which pan is the right pan for me – Natural Sand Finish, High Polish or Non-Stick?  This is a question that is asked all of the time.  What it boils down to is preference.  While the Non-Stick was voted the pan of choice by Cook’s Illustrated Magazine, it’s not necessarily right for everyone.

All French Chef Omelette Pans are made of very thick cast aluminum. It is this massive amount of metal which allows the pan to be preheated to a very high temperature before tossing in the butter or other shortening for quick transfer of heat to the egg mixture, which then results in the perfect omelette – done in two minutes or less.

Here is a simple breakdown of the different finishes of The Original French Chef Omelette Pan…

1.  Natural Sand Finish – this pan has no finish on it at all and therefore is our most porous pan.  What it means to the cook; it must be seasoned properly and as needed to maintain a natural non-stick quality.  As the most porous pan cooks who enjoy this pan really feel that it holds the seasoning much better than any other pan.

2.  High Polish – this pan is a buffed out version of the Natural Sand Finish.  It still needs to be seasoned regularly in order to maintain a natural non-stick effect however it is felt that perhaps this pan does not hold the seasoning as well.   However, the High Polish French Chef Omelette Pans have for over 50 years been the absolute favorite for gift giving.  The recipients adore these gleaming descendants of Julia Child and cherish them for a life time.

3.  Non-Stick – the 8" version of this pan was reviewed by Cook’s Illustrated in 2009 and selected as the one America's Test Kitchen Prefers (read review). This pan has a non-stick coating but still should be seasoned regularly.  The Original French Chef omelette pan, Model BFC8NS, was designed by Julia in conjunction with the Pot Shop of Boston in 1963 for her own use. Made in the style of French omelet pans, its thick cast aluminum heats slowly and evenly, and the very shallow, curving sides help turn out perfect omelets every time. This model is the 8-inch nonstick model, the one that the test kitchen prefers.

Back in the early 1970’s the very famous late actor Yule Brenner caused absolute consternation in the culinary circles of Paris where he owned or rented a medieval castle, and very much slighted the French merchants, culinary merchants by ordering from the Pot Shop of Boston from France the Original French Chef Omelette Pan in Boston. The somewhat arrogant Frenchman could not accept Yule Brenner’s belief that the French Chef Omelet Pan was infinitely superior to anything in the French market place.

All French Chef Omelette Pans are made of very thick cast aluminum, but the finish varies. Most people seem to prefer the natural sand finish because it is porous and many people feel it holds the seasonings better. The black non-stick seems to be preferred by professional chefs.  Please remember that the French Chef Omelette Pan is made of cast aluminum which is a relatively porous metal. As such, it cannot attain a smooth perfect finish. Consequently, what might appear to be imperfections are not, but are part of virtually perfect cooking material.
